How to make a delicious and hearty salad for Meatless Monday!
We all know that eating less meat is a great way to lessen the carbon footprint of our diet, but sometimes inspiration for tasty meatless recipes alludes us. Here at the food action blog we have a simple formula for making a veggie salad that will stick to your ribs.
1. Gather your greens! Kale stands up to dressing, so it works wonderfully if you would like to make your salad ahead. Arugula packs a peppery punch and romaine offers a refreshing crunch.
2. Eat the rainbow with seasonal veggies! Add in a smorgasbord of fresh delights, but remember to try to use local produce. I love radishes, corn, shallot, and avocado.
3. Pick your protein! Vegetarian proteins like tofu, quinoa, nuts and beans (garbanzo and cannellini are my favorite salad toppers) transform your salad from a side to an entree.
4. Dress it up with dressing! The standard formula for salad dressing is three parts oil to one part vinegar. Get creative with nut oils and infused vinegars. Don’t forget to add salt and pepper to taste.
And voila! You have yourself a hearty meal perfect for Meatless Monday, or any day of the week!
